Red chile has a deeper, smoky flavor, while green chile is brighter and fresh. When you choose both, it is called Christmas.
All Chile Pepper plants produce Green Peppers at first. If the Peppers are not picked, over several months the Peppers will turn Red. Same plant, just more time on the vine.
The Hatch Valley stretches along the Rio Grande River from Arrey, New Mexico, south to Tonuco Mountain, southeast of the town of Hatch, and into the Rincon area. It is said that the soil and climate of the area contribute to the especially pleasing flavor of the chilies.

While relatively new, the Lumbre Chile Peppers are noted as the hottest Chile Pepper normally grown in the Hatch Valley.

Matador is an XHot Hatch Green Chile with an above-average heat level compared to other types of Hatch Chile.

With Chile Pods typically about ten inches long, it is valued for its use in Chile Rellenos.

The Charger Chile Pepper has medium heat and an exceedingly excellent flavor. That flavor is noted for being lively, yet not too hot.

The Sandia Select Chile Pepper is very popular with restaurants and those who cook at home. It has a Scoville rating of hot heat to the taste.

The G76 is a tasty hot heat Chile Pepper valued for its uniform fruit, about 7 to 8 inches long, which is often used for Chile Rellenos and as a condiment for grilling.
Formal Cultivar of Chile Peppers as an Agricultural Commercial Crop began on the campus of the New Mexico College of Agriculture and Mechanical Arts which is now New Mexico State University, at the start of the 20th Century.
1913
Research was done under the guidance of Dr. Fabián García, who in 1913 released New Mexico 9, a milder tasting Chile pepper than what was for sale at that time.
New Mexico 9 is an ancestor of all New Mexico Chile Peppers.
1950
In 1950, a variety of Chile pepper called New Mexico 6 was introduced. A few years later it was modified to be less hot to the taste and is called NuMex 6-4.
1975
From the research and development comes New Mexico Chile like NuMex Big Jim which when introduced by Dr. Nakayama in 1975 was listed in The Guinness Book of World Records as having the largest Green Chile Pods.
Typically, the Hatch Chile plants are planted in April, depending on soil temperature and environmental factors, and the Harvest Season is from the first harvests of the Mature Green Chile Peppers in early August until the first freeze, usually in November as that will finish the Red Chile Harvest.
To my knowledge, we are the only company that makes Red Chile Sauce from fresh Red Chile commercially. The issue is that Fresh Red Chile is only available from Hatch, New Mexico, for about 30 days out of every year.
At The Fresh Chile Company, we work six-day weeks, 24-hour days when Hatch Chile becomes available to process. We need to process and put in jars enough Chile for the whole year.

The outside waxy layer is quickly scorched to a char, allowing the removal of the outer skin without damaging the insides.
Throughout the harvest, these Cylinders take the just-picked Green Chile Peppers and apply a hot flame for a couple of minutes while turning the cylinder to do the Roasting. You hear a pleasing popping sound as the Chile roasts.
It is best to use tongs. Nitrile gloves can be handy.
Tongs really help.

While pronounced the same way, there is a huge difference. “Chile” refers to the peppers and “Chili” describes Chili powder, beans, onions and other flavorings. Often, it is called Chili con Carne–Chili with Meat. One way to describe the difference: Chile is an ingredient and Chili is a meal. Both words came from Mexico centuries ago and can be interchanged without changing the good taste of either. Chilly is what winter is like in Minnesota.

Hopefully you took only a small bite of whatever Chile covered food. If so, the best thing to do is eat a dairy product, Cheese, or Milk. Or a spoonful of sugar helps. No, don’t drink water. Doesn’t help much.
Before opening, jars remain fresh for 24 months from manufacturing, and you can find an exact expiration date on the bottom of each jar. Do keep it in your refrigerator once you have opened it!

Papa's Chunky Hatch Chile Salsa and Mama's Blended Hatch Chile Salsa have many of the same ingredients. However, there is a texture issue because Papa’s is Chunky and Mama’s is Blended.
