History

Former COO of Tabs. I built its creator program to 100M monthly social impressions, and the paid ad engine alongside it. The numbers below come from videos that program produced.

At Tabs I built the creator program the same way: a small first roster, a few formats, losers killed early, pay tied to output. Hatch chile, relish and sauces are a different category from anything I have run. I have not run this category, so the claims sheet and the food rules come from your wording and your check.

Why now

  • 36,000+

    A cooking group already exists

The Fresh Chile Cookin' Facebook group is described as home to 36,000+ members who cook and share Hatch chile. Creators can start from a cooking habit that is already there.

    Published
  • 2778

Reviews show people talk about it

The largest review count I found on the product pages is 2778 reviews. Buyers who write that much are a natural first list for creator invites.

    Published
  • 52

    A cookbook of community recipes

The 2023 cookbook holds 52 community-submitted Hatch chile recipes. Each recipe is a ready-made video for a creator who cooks.

    Published
  • 20%

A repeat-buy offer to send people to

Subscribe & Save gives 20% off select products. A creator video that ends on that button has a clear next step.

Part 4 of 15

Principles

  1. One number to protect

Cost per 1,000 views, target $1. Every format, creator and hook is judged on it. The simulator starts at $5.74, so closing that gap is the work.

  2. One variable per test

Same jar, same recipe, one new hook. Seven videos per creator per week and 303 videos a month give enough volume to read a hook fast.

  3. Losers killed early

A format that stalls in its first week of posts loses its slot to the best one. The hook library grows from winners only.

  4. One work channel for everything

Briefs, claim questions, drafts, reports and checks sit in one team workspace, so a creator never waits on email for an answer.

One channel for everything

Briefs, drafts, reviews and the weekly numbers

Illustrative
  1. MarisolMon morning

This week's brief: breakfast burrito with Hatch green chile. Show the jar, say it is made in Las Cruces, New Mexico. Seven videos, one new hook in each.

  2. DevTue afternoon

Can I say the Cowboy Candy Relish is better for you than regular relish?

No. No comparisons and no health claims. You can say 20 calories per serving, that is on the product page.

  3. MarisolWed morning

Draft back: the Santa Fe relish shot is dark and the price is not on screen. Reshoot by a window, show the $12.95 jar, same hook.

  4. Check botAppThu morning

Check: every live post this week carries the paid-partnership label and no health wording. Two posts flagged against the claims sheet.

  5. TavoFri afternoon

My Papa's chunky sauce video just passed 100,000 views.

Good. The $50 flat bonus applies, once this month, organic views only. I am pulling the video for a paid test.

  6. Report botAppMon morning

Weekly report: videos posted, views, cost per 1,000 views against the $1 target, top hook. Two creators are below the seven-video pace.

The messages illustrate the working channel, with invented people: briefs go out on Monday, claims questions get an answer the same day, and nothing posts without the check.

Part 5 of 15

Formats

  1. Fire-roast and chop

    Brief 01

    Fire-roast and chop

“This is how I roast Hatch green chile at home.”

Fresh Hatch peppers over a flame or grill, then chopped. One overhead take, the box on the counter.

  2. Ranch dip in minutes

    Brief 02

    Ranch dip in minutes

“Two spoons of this turn sour cream into a dip.”

Mix the 575 Hatch Green Chile Ranch Seasoning with sour cream on camera, then chill and serve with chips.

  3. Pasta night

    Brief 03

    Pasta night

“I put green chile in my pasta sauce. Here is the result.”

Simmer Papa's Pasta Sauce, pour over pasta, finish on a close shot of the chunks. Label visible.

  4. Blind salsa taste test

    Brief 04

    Blind salsa taste test

“Three jars, no labels. Which one is the hottest?”

Three sauces or salsas, blind taste, honest reaction, then reveal the names and the heat levels printed on the labels.

  5. Smothered breakfast burrito

    Brief 05

    Smothered breakfast burrito

“Breakfast burrito, smothered in Hatch green chile.”

Build the burrito from a Fresh Chile Cookin' recipe in one continuous cook, finishing on a close shot of the chile.

Every product line in a video comes off the claims sheet word for word, for example “100% Certified Hatch Chile from Hatch, New Mexico”, “Made with real ingredients and no artificial flavors”, “Made in Las Cruces, New Mexico”. Product names are said as printed.

Part 6 of 15

Recruiting

Four sources in

  • Fresh Chile Cookin' Facebook group

The group is described as home to 36,000+ members who cook and share Hatch chile. I would start with the people who post recipes there most often.

  • Recipe contest authors

The cookbook holds 52 community-submitted recipes and the 2023 contest winners. These are cooks who already cook this chile.

  • Reviewers and repeat buyers

Product pages show review counts, the largest 2778 reviews. Customers who review often are a warm first list for a creator invite.

  • Affiliate or ambassador page

I did not find an affiliate or ambassador page on freshchileco.com. So we start with a short application and a brief, not an existing program.

Five filters, fewer each step

  1. 1Cooks on camera

Shows a real kitchen and a full recipe from start to finish, not a jar held up to the lens.

  2. 2Fluent in chile

Knows green chile, roasting and heat levels. Can say Medium-Hot without guessing.

  3. 3Reads a brief

Posts the hook as briefed, then adds a variation. Follows the claims sheet without argument.

  4. 4Clean disclosure

Labels paid posts clearly. Past sponsored work reads as honest.

  5. 5Seven a week

Can film seven videos per week, or says up front what the real number is.

Part 7 of 15

Who

  • Weeknight family cook

Feeds a family fast and wants a sauce that does most of the work.

Likely product: Papa's Pasta Sauce (Chunky Hatch Chile)

  • Breakfast burrito maker

Posts morning cooks and puts green chile on eggs and burritos.

Likely product: Pure Hatch Green Chile

  • Grill and burger person

Piles toppings on burgers and hot dogs; the relish is one more topping.

Likely product: Santa Fe Grande (Pickled Pepper Relish)

  • Game-day dip host

Hosts and wants a dip that takes minutes, with a Hatch green chile ranch.

Likely product: 575 Hatch Green Chile Ranch Seasoning

  • Recipe collector

Cooks from cookbooks and shares community recipes with followers.

Likely product: Fresh Chile Hatch Chile Recipe Cookbook (2023 Physical)

  • Pantry restocker

Reorders the same jars and responds to a standing discount.

    Likely product: Fresh Chile Membership

Left off, every time

Always left out: creators who make health claims about chile or heat; anyone who compares Fresh Chile to other brands; anyone who will not use the paid-partnership label; accounts that buy views or reviews. Category rule: no health claims, ever.

  • “backed by our 90-Day Satisfaction Guarantee”

    Fresh Hatch pepper box videos

Never said

Each one with the reason it stays out.

  • Eating chile helps you lose weight

A health outcome. The brand makes no such claim.

  • Green chile is good for your gut

A health outcome. The brand makes no such claim.

  • Healthier than other salsas and relishes

A comparison with no basis in the brand's wording.

  • Organic, non-GMO or gluten-free

None of these appears in anything I read.

  • Free shipping on every order

Free shipping is a member perk on rates up to $20, US only.

  • Mild, not spicy at all

Heat levels are printed per product; the relish is Medium-Hot.

  • Safe for every allergy

Cabana Boy Salsa is processed in a facility that also processes soy and fish.

To confirm with the brand

Held until someone on the brand side signs off.

  • Find it at a store near you

A Retail Locations page exists, but I have no list of stores per product. No creator says where to buy in person until the brand confirms.

  • A Fresh Chile Membership pays for itself in just three orders

The line is the brand's own, but it depends on order size. Confirm before any creator uses it.

  • Exact heat on the fresh pepper boxes

Each variety carries its own heat wording. Confirm per variety before a taste test.

Pay

  • Starter

    $300–600

    a month, by band

New to brand work: one format at a time, starting with Santa Fe relish and Pure Hatch Green Chile.

    Bonus at the cap: $300

  • Standard

    $500–1,000

    a month, by band

Steady posters who hold a seven-video week and follow the claims sheet on pasta sauce and seasoning.

    Bonus at the cap: $500

  • Premium

    $800–1,500

    a month, by band

Proven cooks with a loyal audience, trusted with the full range, from peppers by the box to the cookbook.

    Bonus at the cap: $700

  1. Under 100,000 views

    $0

The base pay covers the work.

  2. 100,000 views

    +$50 flat

    Whatever the band.

  3. 1,000,000 views

    Top-up to your cap

Bonus = band cap − base pay.

  • One bonus per creator per month: the $50 flat for a video that passes 100,000 views.
  • The bonus is per video: only the video that passes 100,000 views earns it.
  • Organic views only. Views from paid boosts do not count toward the 100,000.
  • No bonus on a video that broke the claims sheet or the food rules, even if it passes 100,000 views.

Starter: $600 cap − $300 fee = $300 bonus; Standard: $1,000 cap − $500 fee = $500 bonus; Premium: $1,500 cap − $800 fee = $700 bonus.

The bonus pays for reach after the work is done, never instead of it. One bonus per creator per calendar month keeps it an incentive and keeps the program cost predictable.

Part 11 of 15

Simulator

On the starting inputs the program costs $10,050 for 1.8M views: $5.74 per 1,000 views against the $1 target. To close the gap, 4.2% of videos go viral or the median video reaches 21,711 views.

Above the $1 target at these inputs.

To hit $1, the roster needs about 10.1M views a month. That means about 4.2% of videos going viral, or a median near 22K views per video. That is why the day-90 gate exists: keep the accounts that clear it, replace the rest.

Proposed, not measured. Views = videos × median, breakouts at 10× the median, viral at 750K. Bonus: +$50 for a viral video, one per creator per month.

The math. Videos a month = 10 creators × 7 a week × 52 ÷ 12 = 303. Views per video = (1 − 4% − 0.5%) × 1,500 + 4% × 10 × 1,500 + 0.5% × 750,000 = 5,782.5; 303 videos × 5,782.5 = 1.8M views a month. Cost = 10 × $1,000 = $10,000 base + 1 bonus × $50 = $10,050. Cost per 1,000 views = $10,050 ÷ 1.8M × 1,000 = $5.74 against a $1.00 target. To hit the target, either 4.2% of videos go viral or the median video reaches 21,711 views, other inputs held.

Move the sliders and the label recalculates. The result is only as good as the guesses behind it, so the median views, the share of breakouts and the share of viral videos are marked as Assumptions until the first month of posts replaces them.

Winning creators move to Standard. The first video past 100,000 views earns the $50 bonus, and the best organic videos get a paid test.

  4. Month 3

    Premium for the steady ones

Premium goes to creators who hold seven videos a week. The hook library feeds paid ads. The roster is trimmed to who clears the target.

  5. Day 90

Exit

From organic to paid

  1. Pick the winners

Videos past 100,000 views, or the best hook of the week, go on the shortlist.

  2. Agree the paid use

The creator agrees to paid use. The claims sheet and the food rules are checked again before anything runs.

  3. Test one variable

Run the video as an ad with one change: the hook, the first line or the cut. Spend stays inside the proposed budget.

  4. Keep or kill

Compare cost against the $1 target. Winners feed the hook library; losers are killed early.

From the video to the checkout

  • Pepper videos go to the Fresh Hatch Chile Peppers collection.
  • Recipe videos go to the Fresh Chile Cookin' pages.
  • Relish and sauce videos go to Original Salsas & Sauces or Hatch Valley Condiments.
  • Repeat-buyer videos end on Subscribe & Save: 20% off select products.
  • In-store mentions wait until the brand confirms its Retail Locations list.

Part 15 of 15

Category rules

Food rules for Hatch chile creators

Fresh Chile sells chile, relish, sauces and seasoning. These six rules keep every post inside what the labels and the product pages say.

  • No health claims

Say what the brand says about a product, in its own words. No weight, gut, heart or energy talk, and no comparisons with other brands.

  • Allergens stay visible

Cabana Boy Salsa is processed in a facility that also processes soy and fish (anchovies). Never call a jar allergy-safe.

  • Storage as labeled

Refrigerate after opening. Cabana Boy Salsa is to be enjoyed within seven days. Show jars closed or put away, never left out.

  • Heat as printed

Use the heat on the label: Santa Fe relish says Medium-Hot, Cowboy Candy says Medium Hot. Never describe a jar as mild or not spicy.

  • Numbers from the page

Prices, sizes and calories only as printed: relish $12.95, 16 oz; Mama's Marinara 70 calories per serving. If unsure, ask in the claims channel.

  • Disclosure on every post

Every paid video carries a clear paid-partnership label, spoken and on screen. A video that breaks any rule earns no bonus, even past 100,000 views.

The brand’s legal team sets the final rules. This is the operating floor I’d start from, not legal advice.
